Cukes and Pickles

Whatever else may be going on this summer, our cucumber vines have been very, very busy. Usually we go out once a week or so, and find WAY TOO MANY cukes hiding under leaves and in the nearby thorny rosebushes. We like to eat them raw, in sandwiches or with whatever else we're eating, but Daddy decided he'd make some pickles, too. So he made and canned three kinds of pickles, and after about two weeks we had a taste test.

Options one, two and three.

We all agreed that the first option was the best, but it was pretty mushy, and not all that wonderful. Since we've been busy lately, too, we haven't made more.

Options two and three left a lot to be desired.

One look says it all. We'll stick with cukes and let the pickles go this year. Luckily a neighbor girl runs a veggie stand where we can dump our excess bounty.
